How to store watermelon

Keep whole Hermiston melons at peak flavor and make cut fruit last through the week.

Whole watermelon — before cutting

Store an uncut watermelon at room temperature (cool pantry or counter out of direct sun) for up to about a week if it was ripe when purchased. Refrigerating a whole melon too early can dull flavor and change texture — especially for vine-ripened Hermiston fruit picked at peak sugar.

Once cut, refrigeration is required. If your kitchen runs hot in summer, move whole melons to a cooler spot or the fridge once they reach ideal ripeness.

Cut watermelon — refrigerator storage

  • Wrap cut surfaces tightly in plastic wrap or store in an airtight container
  • Use within 3–5 days for best taste and food safety
  • Keep away from strong-smelling foods — watermelon absorbs odors easily
  • Drain excess juice if pooling; it accelerates softening

Freezing (for smoothies only)

Frozen watermelon works well in smoothies and sorbets but loses crisp texture when thawed. Cube seedless flesh, spread on a tray to flash-freeze, then bag. Not recommended if you want fresh eating quality.

Signs a melon has gone bad

  • Sour or fermented smell
  • Slimy or mushy flesh
  • Deep cracks with seeping juice on a whole melon
