Classic wedge platter

The default for MelonFest and backyard BBQs: chilled wedges on ice, lightly salted if you like the sweet-salt contrast common in the South and increasingly popular in the PNW. One large Hermiston melon feeds a crowd — see cutting guide for portions.

Watermelon–feta salad

Cube seedless watermelon, crumble feta, add fresh mint and a squeeze of lime. Optional: thin red onion, balsamic reduction, or cracked black pepper. Best with peak-season melon — bland off-season fruit will not carry the dish.

Agua fresca

Blend 4 cups cubed watermelon with 2 cups cold water, lime juice to taste, and a little honey if needed. Strain for smooth texture or leave pulpy for rustic style. Serve over ice; spike for adults only if desired.

Grilled watermelon

Thick crosswise slabs (1 inch) on a hot grill 2–3 minutes per side until marked. The heat concentrates sugars — works best with very ripe melons. Finish with lime, chili salt, or yogurt-mint sauce.

Frozen treats

  • Popsicles: purée with a little sugar and lime; freeze in molds
  • Sorbet: blend frozen cubes with lemon and simple syrup in a food processor
  • Smoothies: watermelon + strawberry + ice — no dairy required

Kids and events

Seed-spitting contests, melon-carving displays, and "guess the weight" games are staples at Umatilla County fairs. For schools, wedge servings beat pre-cut cubes for less prep waste.
